Raw Mango rasam

Ingredients: Raw mango - 1 A bowl of drinking water Salt as per taste Jaggery - 1 tablespoon powder Turmeric powder -  One pinch Curry leaves - As needed Seasoning - Mustard seeds one teaspoon , jeera one teaspoon  Oil-1 Teaspoon  Method : 1. Put the mango on the stove and let it roast fully , later take the outer layer of mango and take the pulp from it. 2. Then add it to water then add salt and turmeric powder, jaggery and curry leaves. 3. Later add seasoning to it. Nutritional values : Vit A , Vit C, fibre . Mango rasam is  good for summer. We dont feel thirsty and feel energitic with mango rasam.

Mango instant pickle

Ingredients: Mangoes - 2 Turmeric powder - 1 Pinch Salt - 2 Teaspoons Methi powder- 1 Teaspoon Chilli powder - 2 Teaspoons Oil - 1 Tablespoon Seasoning - Mustard seeds, Jeera, Chanadal, Urad dal one tea spoon each Asoefotida- 1 pinch Red chilli - 2 for  seasoning Preparation : 1. Clean mangoes with water and wipe them off the water. 2. Then cut them into small pieces  and add salt , methi powder and chilli powder , turmeric powder.  3. Put seasoning with the above ingredients. Nutritional values:  Mango has Vit C, Vit A, , fibre, Vit  B 6.

Kaju katli

Ingredients: Kaju - 100 gms Sugar - 100gms Cardamom-3 made into powder Kewra water optional - 1/2 Teaspoon Ghee - 2 Teaspoons Method of preparation : 1. Grind cashew nuts into a fine powder.  2. In a pan,add one cup of sugar ,one cup of water and make sugar syrup of one string consistency, add cashew  powder,ghee,saffron, kewra water and cardamom powder . 3. Stir it till it becomes like a smooth dough just like a roti dough. 4. Apply few drops of ghee on a plate and transfer this dough on to the plate and spread it equally. 5. Let it cool down after which cut it into pieces and store it. Kaju Katli will be fresh for 3- 4 days. Nutritional values of Cashew nuts:  Cashew nut contains iron, magnesium , Vitamin B6 and protein.

Neer dosa

Ingredients: Rice- 1Glass Salt as per taste Water as needed Coconut scrap (optional) Method: Soak rice for 5 hours, preferably over night and then grind it into a smooth batter consistencyby adding water. The batter should be in a very thin consistency just like water.Heat a pan till it’s quite hot ,take one ladle of batter and pour it on the pan . Neer dosa can be served with coconut chutney or veg korma.   Note : Make sure the batter is extremely thin so that you can make good dosas . Nutritional values: Contains carbohydrates,  vitamins
