Pancakes (Eggless)

Pancakes (eggless) Ingredients. : Wheat flour -2 Cups Milk - 1  Cup Jaggery as needed Baking soda and baking powder one pinch each Butter - 1 Tablespoon  Method  : 1. Take a bowl, sieve wheat flour, baking soda, powder into the same bowl add in milk & jaggery grated or powder and whisk until no lumps and the batter must be as the dosa batter consistency(neither too thick nor too thin). 2. Take a paddle of the pancake batter and pour it onto a hot pan ,make sure the batter isn’t spread too much as it has to be a little thick . 3. Add a small cube to butter on the pan and let the pancake cook well until golden brown . 4. Transfer it to a plate and serve it with either maple syrup ,honey or jam of your choice. A healthy way of making pancakes , wheat flour used in the place of maida.

Beetroot chutney

Ingredients : Beetroot - 2 Red chilli and green chillies two of each Coriander seeds -1Teaspoon Jeera - 1Teaspoon Seasoning - Chanadal, Urad dal, mustard seeds, jeera, methi seeds one teaspoon each ,  asoefitida one pinch ( garlic optional) Curry leaves Coconut few pieces Oil for seasoning Salt per taste Turmeric powder Method of preparation: 1.  Clean the beetroot with water and peel off the skin, then cut into small pieces. 2. Fry them in little oil till it reduces raw smell , then take it into a bowl. 3. Later fry red chilli and green chilli in same oil. 4. Fry coriander seeds and jeera  for few seconds. 5. Then make seasoning with above ingredients adding curry leaves to it. 6. Take beetroot pieces coconut pieces, red chilli and chilli fried salt and turmeric into a mixi jar. 7. Mirchi ka salan

Ingredients : Big chillies - 1/4 kg Groundnut- 1Tablespoon Sesame seeds - 1 Tablespoon  Salt as per taste Scrapped coconut - 1Tablespoon Garammasala powder - 1Teaspoon Tamarind pulp -1Tablespoon Turmeric powder one pinch Chilli powder - 2 Teaspoons ( Kashmiri chilli powder) Coriander powder - 1 Teaspoon Jeera powder - 1Teaspoon Ginger garlic paste Coriander leaves one small bunch Oil - 1Tablespoon Method of preparation: 1. Shallow Fry chillies in oil . 2. Keep a pan on stove and fry groundnut, sesame seeds and coconut separately without oil. 3. Make a paste of it pouring little water. 4. Put pan on the stove , add oil into the pan and then add mustard seeds, jeera and methi seeds , curry leaves to it. 5. Later add the gravy to it and  let it cook for sometime by adding water to it. 6.  Add salt, turmeric powder, chilli powder , coriander powder and jeera powder to the gravy. 7. Vegetable Biryani

Ingredients : Basmati rice - 1 Glass Vegetables -  Potato, peas, carrot, beans, paneer, cauliflower Salt as per taste Saffron soaked in water for sometime Garam masala  powder - 1 Teaspoon  Ginger and garlic paste Bay leaves -2 Curd  - 1 Cup Cashew nuts and kismiss optional Coriander seeds, poppy seeds, jeera, one teaspoon each , coconut piece  Method of preparation :   Soak rice for half an hour in water. Clean all the vegs with water and peel the skin of vegs and cut into small pieces. Grind garlic , ginger , coriander seeds jeera, coconhut, poppy seeds into a smooth paste.  Soak saffron in water for few mins.  For one glass of rice add one and half glasss of water to cook. Add Bay leaves , cinnamon, cardamom, clove to the soaked rice and put into a cooker. Add all vegs and other ingredients as given above to  the rice. Cook rice for one whistle and take it out. Straw berry and banana milk shake

Ingredients: Milk - 1 Glass Banana -2 Strawberry -1 pack Honey - 1 Teaspoon Preparation: Clean the strawberry with water and cut into pieces, cut banana also into pieces. Add both fruits to milk and make a smoothie. Add honey instead of sugar. It gives instant energy. Nutritional value: Strawberry has vit C and banana too have vit c and vit B.

Adai ( Tamil Nadu ) receipe

Ingredients: Tuvar dal - 1 Cup Chana dal - 1 Cup Urad dal - 1Cup Moong dal - 1 Cup  Raw rice - 11/2 Cup Red chillies - 4 Jeera - 1Teaspoon Sounf (Fennel seeds)1 Teaspoon Curry leaves - few Asoefitida - One pinch  Salt per taste Ginger - 1 Piece   Method of preparation: 1. Soak all dals and rice for 4 hours. 2.Later mix all the ingredients given above and make a  fine paste of it. 3.Then make like a dosa and serve it  hot with majjiga pulusu or ginger chutney. Nutritional values : Contains protein and carbohydrates.

Bachali kura ( Basella or vein spinach or Malabar spinach) pachadi

Ingredients : Bachali kura -  3 bunches Coriander seeds, jeera , sesame seeds one teaspoon each. Red chillies-3 Seasoning - Chana dal, urad dal, mustard seeds  one teaspoon each red chillies-2 Salt as per taste Turmeric powder one pinch Garlic pods optional Tamarind little Oil - 2 Teaspoons  Method of preparation: 1.  Put a pan on the stove. 2. Add little oil and fry coriander seeds and jeera  and sesame seeds separately. 3. Take it out into a bowl and add leafy veg to the oil and let it fry for few secs. 4. Later make seasoning and mix all the ingredients into a mixi jar. 5. Add salt and turmeric powder too while grinding. Nutritional values:  Malabar spinach contains vit A, vit C, iron, calcium protein, manganese, magnesium and potassium.

Coriander rice

Ingredients: Coriander leaves - One  bunch Coconut scrap optional Turmeric powder - One pinch Green chillies - 2 Cooked rice - One big bowl Salt as per taste Seasoning : Chana dal -1Teaspoon,  mustard mustard seeds - 1Teaspoon, Jeera - 1  Teaspoon, Urad dal -1 Teaspoon,Red chillies -2 , Cashew nuts - 1 Tablespoon Lemon  juice for taste Method: 1. Take a pan add little oil and add coriander leaves  and green chillies, fry it for few seconds and keep it aside. 2. Add little oil to the pan and put seasoning with the ingredients given above. 3. Make coriander leaves and green chillies into paste. 4. Then add it to the seasoning. 5. Add rice , salt ,turmeric powder to it. 6. And lastly add lemon juice and serve it hot. Nutritional values: Contains vit C, vit K, magnesium, iron,manganese.

Majjiga pulusu

Majjiga pulusu Majjiga pulusu:  Ingredients: Butter milk - 1/4 Ltr Salt as required Ladies finger + bottle gourd (veg) Curry leaves and coriander leaves  Chana dal -1 tea spoon ,  raw rice  - 2 tea spoons soaked and grinder into a paste. Turmeric powder - One pinch For gravy -  Greenchillies -  2, coriander seeds - 1Teaspoon ,pepper - 1 teaspoon, fresh coconut - one piece, jeera - 1 teaspoon,  ginger - one piece (Grind all the ingredients adding little water Seasoning - Mustard seeds, jeera, methi seeds, urad dal one teaspoon each ingredient, red chillies -2, asoefitida or garlic as per your taste. Method of preparation : 1. Boil the vegs separataely, add  the paste made in the mixi to  butter milk.  2. Add salt and turmeric powder to the butter milk.   3. Let it boil till all the ingredients get mixed with butter milk.  4. Lastly add curry leaves and coriander leaves. 5. Make seasoning with above given ingredients and add it to majjiga pulusu.   

Sago ( saggubiyyam) halwa

Sago ( saggubiyyam)  halwa : Ingredients:  Saggubiyyam - 1 Glass ( Made into powder) Water - 2 Glasses Sugar - 1 Glass  Ghee -  1/2cup melted Cardamom powder  -  one pinch Cashew nut and kismiss shallow fried in ghee Saffron soaked in water Preparation : 1. Put non stick pan on the stove and pour water in that pan. 2. And add sagu  powder in that till it gets cooked , then add ghee and sugar to it  till all gets mixed and cooked. 3. Later add cardamom  powder , saffron water to that and garnish with cashew and kismiss. 4. Tasty and healthy sweet ready. Nutritional value of Sago (saggubiyyam) :  Contains iron, carbohydrates, calcium , vit k.

Mavidikaya gangabayalu pappu ( mango and leafy veg dal)

Ingredients: Tuvar dal - 2 cups Mango one medium sized Gangabayalu leafy veg  - 3 bunches Salt as per taste Turmeric powder - 1 pinch Chilli powder - As per taste Seasoning - Urad dal,  chana dal, mustard seeds,  jeera  each one teas spoon dry red chillies - 2 , asoefitida one pinch .(garlic can replace asoefotida). Coriander leaves and curry leaves for garnishing.  Method of preparation: 1. Clean dal and leafy veg with water . 2. And add dal, leafy veg , mango pieces and  two green chillies into the cooker and let it cook for three whistles. 3. Then add  salt , turmeric powder,chilli powder, curry leaves, coriander leaves and let the spices mix well while cooking the dal for 5 mins. 5.Later add seasoning to the dal. Serve it with hot cooked rice. Nutritional values: Protein, carbohydrates, vit A, vit C.
