Chukka kura pachadi ( Dock / Sorrel)

Ingredients : Chukkakura ( Dock / Sorrel ) - 5 bunches Salt as per taste Turmeric powder one pinch Chilli powder as per taste Fenugreek powder - 1 Teaspoon Oil for seasoning Seasoning -  Mustard seeds, cumin seeds, urad dal, chanadal, one teaspoon each, dry red chillies -3 , asoefitida / garlic Method of preparation  : 1. Clean the leafy vegetable with water and cut into small pieces. 2. Put the pan on the stove , add the leafy vegetable and let it get cooked well. 3. Add  salt, turmeric powder, fenugreek seeds powder, chilli powder to it. 4. Make seasoning with above mentioned ingredients and add it to the chutney.

Potato kurma ( Aalu kurma) :

Ingredients: Potatoes - 300 gms Green peas - 50 gms Ginger garlic paste - 1 Teaspoon Green chillies slitted - 3 Curd - 1 Small cup For a paste  :  Cashew nuts - Handful, poppy seeds - 1 Tablespoon ,  coconut pieces ( fresh), coriander seeds, cumin seeds Onion  - 1 Big Tomatoes  - 2 Turmeric powder one pinch Chilli powder  - 1 Teaspoon Coriander leaves  - Handful Cinnamon stick. - 2 inches Cardamom - 2 Cloves - 3 Garam masala powder - 1 Teaspoon Salt as per taste Oil - 1 Tablespoon Method of preparation  : 1. Boil the potatoes in a cooker , by adding water to potatoes. 2. Put a pan on the stove add oil, add garam masala ingredients, later add onion and tomatoes ( make them into tiny pieces). 3. Add turmeric powder, salt and boiled potatoes and green peas. 4. Then add the paste, garam  masala powder,  turmeric powder, ginger and garlic paste,  chilli powder , green chillies slitted , let all the ingredients mix up well, later add the curd, let it get cooked for fe

Peanut salad

Ingredients : Peanut / Groundnut - 2 Cups Salt as per taste Chilli powder as per taste Coriander leaves handful Chat masala powder - 1/2 Teaspoon Onion - 1 Big Tomatoes - 2 Carrot - 1 Big Cumin seeds - 1/2  teaspoon Lemon  juice - 1 Tablespoon Turmeric powder. - One pinch Method of preparation : 1. Soak groundnut/ peanut in water for few hours. 2. Boil it in water till it is cooked well, add turmeric powder, little salt to the ground nut . 3. Chop onions and tomatoes into an even shape. 4. Chop coriander leaves , peel the skin of carrot and grate it. 5. Take a bowl add boiled groundnut, salt little, chat masala powder, chilli powder, cumin seeds powder, lemon juice. 6. Garnish with coriander leaves and serve it.

Aratikaya ( Raw banana ) masala curry :

Ingredients : Raw banana - 2 Salt as per taste Turmeric powder one pinch Onions - 2 Tomatoes -2 Chilli powder - 1 Teaspoon Ginger small piece Green chillies  - 2 Garlic - 2 cloves ( Optional) Coriander leaves handful Oil - 1 Tablespoon Garam masala - 1 Teaspoon Method of preparation : 1. Boil raw bananas in water till gets cooked well. 2. Take a pan , add little oil and add chopped onions and tomatoes , green chillies, ginger, garlic and sauté well and blend into a paste. 3. Add cooked raw banana pieces into that gravy. 4. Then add salt, turmeric powder , chilli powder and garam masala and cook till all the ingredients mix up well. 5. Lastly add lemon juice and coriander leaves to the curry. 6. It can be served with chapathi or rice.

Lobia beans curry

Ingredients : Lobia beans - 1/4 kg Salt as per taste Turmeric powder one pinch Oil for seasoning Seasoning - Urad dal, chana dal, mustard seeds,  cumin seeds, one teaspoon each, dry red chillies - 3, ground nut - 1 tablespoon Chana dal - 1 Tablespoon Coconut scrapped - Dry coconut powder or fresh coconut scrapped Curry leaves - Handful Chilli powder -  1 Teaspoon Method of preparation: 1. Clean  the lobia beans with water, and cut the lobia beans into even sized pieces. 2. Soak the chana dal in water for one hour. 3. Boil the lobia beans in water till it gets cooked well. 4. Put a  pan on the stove add oil for seasoning, and all the ingredients mentioned above. 5. Later add curry leaves , boiled lobia beans in the seasoning. 6. Add salt , turmeric powder and chilli powder to the curry 7. Lastly add coconut powder to the curry.

Vamu Annam ( Carrom seeds)

Ingredients : One bowl cooked rice Salt as per taste Oil for seasoning Turmeric powder - 1 Teaspoon Curry leaves - Handful Cashew nut - 1 Tablespoon Carrom seeds - 11/2 Tablespoon Green chillies - 3 Cumin seeds - 1 Teaspoon Method of preparation : 1. Put a pan on the stove add sufficient oil for seasoning, then add carom seeds (vamu) , curry leaves, green chillies slitted, cashew nuts, cumin seeds , and let it fry till it gives good aroma. 2. Now add this into the cooked rice. 3. Serve it hot with any pickle .

Taco ( Veg)

Ingredients  : Tacos ( Store brought)  - As per your serving Cheese - 10 -15 gms Mayonnaise - As required Mustard sauce - As required Mixed herbs - 1 Teaspoon Oil -  1 Teaspoon For Salsa - Tomatoes  finely chopped,  half capsicum (cut into small pieces) , one  green chilli chopped, salt , pepper, lemon juice, onion finely chopped. For the paneer filling : Paneer, onion, ginger garlic grated, tomato , a pinch of sugar, finely chopped parseley or coriander leaves. Method of preparation : 1. Heat the Tacos in an oven or a pan for 30 - 35 secs.,  or heat it until it is warm and a bit crisp. 2. In a bowl add the chopped vegetables,  and other  ingredients for salsa mentioned above , mix them well. 3. Take a pan add some oil, once heated , add in finely chopped onion , tomato and  paneer and sauté well. 4. And add all the ingredients and prepare the filling, add handful of coriander leaves chopped too. Serving : 1. For serving a Taco,  place a Taco on a plate , add som

Baby corn paneer curry

Ingredients : Baby corn - 50 gms Paneer - 50 gms Salt as per taste Fennel seeds - 1 Teaspoon Ginger  - 1 inch piece Garlic - 3 cloves Chilli powder - 1 Teaspoon Cumin seeds powder - 1 Teaspoon Onions - 2 Tomatoes - 2 Coriander leaves - Handful Green chillies - 2 Garam masala powder  - 1 Teaspoon Curd  - 1 Tablespoon Method of preparation : 1. Cut onions and tomatoes into desired shape. 2. Put a pan add onion pieces, green chillies, ginger garlic and saunf in butter, sauté for few secs. 3. Make a paste out of it. 4. Boil baby corn and paneer in sufficient water. 5. Put a pan on the stove, add little butter, then the paste, and tomatoes. , cook for few mins. 6. Add baby corn and paneer to the paste. 7. Later add salt, garam masala powder, chilli powder, cumin seeds powder, curd , coriander leaves, mix all the ingredients well. 8. Serve with roti / chapathi.

Chana. Chat ( Evening snack) :

Ingredients  : Chana ( whole bengal gram)  - 150 gms Onions  -2 Tomatoes -2 Salt as per taste Chat masala - 1 Teaspoon Red chilli powder - 1/2 Teaspoon Cumin seeds powder - 1 Teaspoon Lemon juice - 1 Tablespoon Potato - 1   Boiled ( Cut into pieces) Optional Coriander leaves - Handful Mint leaves - Handful Method of preparation  : 1.  Soak and boil the whole bengal gram, add little salt while boiling it. 2. Cut onions and tomatoes into small pieces. 3. Take a bowl,  add whole bengal gram , onions, tomatoes,  salt, cumin seeds powder,  red chilli powder , chat masala, lemon juice, coriander leaves and mint leaves. potato pieces ( boiled) Optional. 4. Mix all the ingredients and serve it.

Kobbari Perugia pachadi ( Coconut curd chutney)

Ingredients : Curd  - 200 ml Grated coconut - 1 Cup Salt as per taste Turmeric powder. one pinch Green chillies - 3 Ginger - 1 piece Curry leaves and coriander leaves. - Handful Seasoning - Urad dal,  mustard seeds,  cumin seeds, fenugreek seeds, carom seeds, one tea spoon each, dry red chillies - 2, asoefitida  one pinch and garlic( Optional) Oil for seasoning Method of preparation  : 1. Take fresh curd in a bowl, add grated coconut  to the curd. 2. Add salt , turmeric powder, ginger , green chillies paste, salt, curry leaves, coriander leaves to the curd. 3. Prepare seasoning with the above given ingredients and add  it to the curd.

Water melon refreshing drink

Refreshing Water melon juice : Water melon - 1/2 fruit Black salt - One pinch Sugar  - 1 Tablespoon Mint leaves - Handful  Lemon juice  - 1 Tablespoon Method of preparation : 1. Cut the water melon into small pieces. 2. Take a blender add water melon  pieces,  sugar, black salt, lemon juice , mint leaves and blend well 3.Water melon cooler is ready.

Vankaya pachi pulusu (Aubergine gravy curry )

Ingredients : Brinjal (Aubergine)  - 1 Big Salt as per taste Onions - 2 Turmeric powder one pinch Green chillies -3 Ginger - 1 long  piece ,cut into small pieces Coriander leaves. - Handful Curry leaves - few leaves Oil for seasoning Seasoning - Urad dal, mustard seeds, methi seeds, cumin seeds, chanadal one teaspoon each, dry red chillies - 3, asoefitida one pinch Tamarind pulp - 1 Cup ( diluted with water). Jaggery powder. - 1 Teaspoon ( As per wish) Method of preparation : 1. Apply oil to aubergine (Vankaya), and directly put it on the stove and roast  all sides of the aubergine. 2. Peel off the skin of the vegetable. 3. Put a pan on the stove , make seasoning with above given ingredients, add green chillies, ginger, onions pieces ( you can add raw onion pieces too) curry leaves, turmeric powder, salt,  add the mashed aubergine too. 4. Let it get cooked, then add the mixture of aubergine into tamarind pulp (dilute it with one cup of water). 5. Add jaggery powder
