Tender coconut ice cream ( Home made )

Ingredients  : Coconut water  - 1 Small Cup Coconut milk - 1 Small Cup Milkmaid - 1/2 Tin Powdered sugar - 1 Tablespoon Full fat Cream - 1 Small Cup Tender coconut meat - 1/2 Cup Tender coconut pieces  - 1/ 2 Cup Method of preparation  : 1. Take tender coconut water and tender coconut pieces , put in a mixi grinder and blend it into  a coarse paste. 2.  Take a bowl  add full cream and whip it  for few secs, add all the ingredients, milkmaid , powdered sugar,  coconut milk, tender coconut pieces. 3.  Keep it in freezer. 4. Take it out after 3, 4 hours , stir it and again keep it in freezer. 5. Do it for two times and it will become smoother, then you can enjoy the ice cream.

Saggubiyyam ( Sabudhana / Sago) vada :

Ingredients : Topiaca Sago -  1 1/2 Cup Salt as per taste Potatoes - 3 small Coriander leaves handful Green chilli - 2 Ginger one big piece Groundnut - 1 Tablespoon Sesame seeds - 1 Teaspoon Turmeric powder - 1 Teaspoon Cumin seeds -  1 Teaspoon Sugar one pinch Oil for deep frying Method of preparation : 1. Boil the potatoes with water. 2. Soak the Sago in water for  few hours. 3. Mix boiled potatoes, soaked  Sago, salt, coriander leaves, green chillies ( Cut into small pieces! Sesame seeds ,ginger pieces, groundnut (fry without oil and make a coarse powder of it), turmeric powder, cumin seeds or cumin seeds powder, sugar, mix all the ingredients well. 4. Make a ball of the mixture and roll it to a vada shape 5. Heat a pan ,add oil to it, after oil gets heated up add these vadas. 6. Fry them both sides till they get golden yellow colour. 7. Serve with sauce or pudhina chutney or any other chutney as you wish.

Onion paratha

Ingredients : Wheat flour - 1 1/2 Cup Salt as per taste Onions -3 Coriander powder - 1 Teaspoon Cumin seeds powder - 1 Teaspoon Turmeric powder one pinch Asoefitida one pinch Green chillies - 2 Chilli powder - 1 Teaspoon Garam masala powder - 1 Teaspoon Coriander leaves  handful Lemon juice - 1 Teaspoon Ghee - For making parathas. Method of preparation : 1. Make a dough with wheat flour for paratha. 2. Cut the onions and add a pinch of salt and keep aside for 5 mins and drain out the water from the onions. 3.  Add in  coriander powder, cumin seeds powder, turmeric powder, asoefitida, green chillies ( chop into small pieces), garam masala powder,  lemon juice, coriander leaves with onions. 4.  Flatten the dough as chapathi and stuff it with the above mixture. 5. Cover the dough with the mixture and flatten it . 6. Put it on a chapathi pan and cook both sides of the chapathi with ghee. 7. Serve with butter,any pickle or curd as per your taste.

Paneer makhan wala

Ingredients : Paneer - 150 gms Salt as per taste Ginger garlic paste - 1 Teaspoon Onions - 2 ( make into a paste) Tomatoes - 3 ( make into a purée) Garam masala - 1 Teaspoon Masala ingredients - Bay leaves, cardamom, cinnamon stick, cloves Butter - 1 Tablespoon Turmeric powder - 1 Teaspoon Oil - 2 Teaspoons Sugar - 1 Teaspoon Kasoori methi - 1 Teaspoon Cashew nut - 1 Tablespoon ( Soak cashew nuts for few mins and make it into a paste ) Coriander powder - 1 Teaspoon Cumin seeds powder - 1 Teaspoon Fresh cream -1 Teaspoon Lemon juice - 1 Teaspoon Method of preparation : 1. Take a pan, add butter and oil , then add masala ingredients, cashew nuts paste, turmeric powder, garam masala powder, coriander powder, cumin seeds powder, required salt, ginger garlic paste, kasoori methi powdered, sugar,  onion paste , tomato purée. 2. Shallow fry the paneer pieces in butter. 3. Add the paneer to the above ingredients mix, and cook for few mins. 4. Lastly add fresh cream ,

Chick peas ( senagala) masala curry :

Imgredients : Chick peas  ( Senagalu ) - 1 Cup Salt as per taste Turmeric powder one teaspoon Kashmiri chilli powder as per paste Garam masala - 1 Teaspoon Kasoori methi  - 1 Teaspoon Coriander powder - 1 Teaspoon Jeera powder - 1 Teaspoon Onions - 2 Tomatoes - 3 Coriander leaves  handful Amchur powder - 1 Teaspoon Masala ingredients - Bay leaves, cardamom , cloves , cinnamon stick. Ginger garlic paste - 1 Teaspoon Green chillies  - 2 Oil - 1 Tablespoon ( Tie a cloth with tea powder , pomegranate seeds, little garam masala ingredients and put in pressure cooker while boiling the chick peas, to give a good flavour.) Method of preparation : 1.  Soak chick peas over night. 2. Cook the chick peas in pressure cooker by pouring 2 glasses of water , for 10 whistles, by adding one teaspoon salt and turmeric powder to the chana. 3. Mango Basundi

Ingredients  : Milk - 1/2 ltr Condensed milk - 1 Small Cup Badam powder - 1 Tablespoon  Cardamom powder  -  1 pinch  Kova ( unsweetened) - 1 Tablespoon  Mango pieces -  Few pieces ( cut into small pieces) Dry fruits  - Cashew nut and  kismiss Saffron - 3 Strands ( soaked in milk for few mins) Method of preparation : 1. Take half  litre of milk in a bowl. 2. Boil the milk till it thickens. 3. Add cardamom powder, condensed milk, almond powder,  kova,  mix all the ingredients well, and take out from the stove. 4. Add mango pieces ( or mango purée) and saffron milk to the rabadi. 5. Lastly add dry fruits and keep in the refrigerator for 2 hours.

Colocasia curry

Ingredients : Colocasia - 1/4 kg Salt as per taste Turmeric powder one pinch Curd - 1 Tablespoon Coriander leaves handful Tomatoes. - 2 Jeera powder - 1 Teaspoon  Coriander powder  - 1 Teaspoon Ginger garlic paste - 1 Teaspoon Chilli powder one teaspoon Oil - 1 Tablespoon Onions - 2 Scrapped coconut  - 1 Tablespoon ( Optional) Method of preparation : 1. Boil the colocasia in water till it is cooked well. 2. Take out the skin of the colocasia and  cut them into even shape. 3. Shallow fry the colocasia and keep aside. 4. Cut the tomatoes , onions ,ginger  and green chillies into small pieces. 5. Put a pan on the stove , add little oil, add onions, colocasia, tomato pieces, green chillies, ginger pieces and let it cook for sometime. 6. Add turmeric powder , salt , chilli powder,  curd, jeera powder, coriander powder, ginger  garlic paste, coconut( Optional). 7. Lastly add coriander leaves.

Broccoli curry

Ingredients  : Broccoli - 150 gms Carrot  - 2 Onion  - 1 Big Green peas  -1 Tablespoon Salt as per taste Jeera -1 Teaspoon Coriander leaves handful Turmeric powder one pinch Ginger  one cube size Green chillies - 2 Dry red chillies  -2 Mustard seeds - 1 Teaspoon Method of preparation : 1. Cut all the vegetables into small pieces 2. Put a pan add oil , prepare seasoning with jeera , dry red chillies, mustard seeds , curry leaves. 3. Add onion, broccoli, peas , carrot , turmeric powder, salt , ginger , green chillies. 4. Let it get cooked for a while, add coriander leaves . 5. Serve with chapathi or rice. 6. You can add  curry powder or garam masala powder according to your taste.
