Coconut milk pulav


 Ingredients :

Basmati rice - 1 glass

Salt as per taste

Coconut milk - 1Small cup

Garam masala- 1 Tablespoon ( Raw)

Coriander powder- 1/2 teaspoon 

Cumin powder -1/2 teaspoon 

Garam masala powder- A pinch

Turmeric powder - 1/4 teaspoon 

Dry fruits (Broken cashews, raisins, chopped badam )- 2 teaspoons

Podina -  Handful chopped

Coriander leaves -  Handful chopped

Onions - 2  sliced

Green chillies - 2

Cumin seeds - 1 teaspoon 

Oil - 11/2 teaspoon s

Butter-  1 teaspoon 

Method of preparation :

1. Heat a pressure cooker, add-in oil and butter, once heated add Jeera, raw garam masala, and sauté it for 30 seconds.

2. Add in dry fruits, slit green chillies, onions, finely chopped mint leaves and coriander leaves and mix it well.

3. Once the onions turn golden brown, add salt, turmeric powder, garam masala powder and coriander cumin powder and coconut milk, stir well

4. Into the cooker add the washed and soaked Basmati rice and mix well to make sure that the milk doesn’t stick to the bottom and mixes well with the raw rice, keep stirring the rice for 1 to 2 minutes before adding in water.

5. Add 1 plus 1/4 glass of water, bring it to a boil before placing the lid.

6. Switch off the flame after 1 whistle and after 7 to 8 mins open the lid and serve the rice hot with raita or any other gravy curry.

Note: I have used store brought coconut milk, but you can use homemade coconut milk. Also you can add veggies like potato, carrot, peas, beans and even paneer to make it a wholesome one pot meal.
